Strawberry Peach Blackberry Paleta

Strawberry Peach Blackberry Recipe

3 cups strawberries, rinsed, tops removed

2 fresh peaches, peeled and pitted

1/3 cup sugar

1/2 -2 cups fresh blackberries

Combine first three ingredients in Cuisinart and pulse until smooth. Place 6-8 blackberries in molds, pour strawberry peach mixture into molds and add sticks. Freeze 4-6 hours. If using cups as molds, freeze for 1 hour before adding blackberries so they will be suspended in the mixture instead of sinking to bottom.

Blackberry Yogurt Paletas

Blackberry Yogurt Recipe

1 lemon

1/2 cup water

1/4 cup sugar

1 1/2 cups Honey flavored Greek yogurt

1 1/2 cups fresh blackberries

Zest lemon. Combine water and sugar and cook over medium high heat until sugar dissolves. Add lemon peel, lower heat and simmer 2 minutes. Allow to cool to room temperature. Place syrup and yogurt in blender or Cuisinart to combine. Evenly divide yogurt mixture in 4-6 molds. Add berries and freeze until set, about 4-6 hours.

Mango Lime Paleta

Mango Lime Recipe

2 1/2 cups fresh peeled mango, cut in 1 inch chunks

1 lime, zest and juice

1/4 cup sugar or less, to taste

2 t fresh ginger grated or 1 t ground ginger

Combine mango chunks, the zest and juice of 1 lime, sugar and ginger in blender or Cuisinart and pulse until smooth. Divide evenly into molds. Add stick and freeze until set, about 4-6 hours.

Avocado Lime Paleta

Avocado Lime Recipe

4 small avocados peeled and pitted

2 limes juiced, plus zest of 1 lime

1/4 sugar or more, to taste

1/4-1/2 cup water*

Combine all ingredients in Cuisinart and pulse until smoothe. Divide into molds, add stick and freeze 4-6 hours. This makes a very creamy paleta and it is a taste sensation! *Water may be added to thin recipe and make a less dense, still creamy paleta.

Blueberry Lemon Recipe

2 1/2 cups fresh blueberries

1 lemon, zest and juice

1/4 cup sugar

Combine all ingredients in Cuisinart and pulse until pureed. If a smooth paleta is preferred, push puree through a fine sieve before pouring into molds to eliminate blueberry hulls. If a traditional paleta is desired, pour mixture into molds. Add stick; freeze 4-6 hours until set.

Raspberry Peach Recipe

3 cups fresh raspberries

2-3 peeled fresh peaches sliced

1 lemon, zest and juice

1/4-1/2 cup sugar to taste

1/4 cup club soda

Place raspberries, peaches, lemon juice and zest, and sugar in Cuisinart. Pulse until all is pureed. Add club soda, give a quick pulse to blend. If you prefer the complete fruit, pour puree in molds and add stick. If you prefer paletas sans seeds, use cheesecloth or a fine sieve to strain them out. Freeze 4-6 hours.

2 1/2 cups fresh or canned chunk pineapple in juice

1 lime zest and juice

1/8 cup sugar

1/4 t ground chipotle chili, or more as desired for heat
